Curd & Coconut Rice

Receipe -
This is one of my favorites . easy to cook and yummmy to eat.

Ingredients (2 people) -

Rice - 2 cups

curd - 2 cups (beaten)
coconut - 1/2 cup (shredded)

Mustard seeds (rai/sarson) - 1 Tbsp
chana daal - 2 Tbsp
urad daal (white one ) - 2 Tbsp
Curry leaves - 5-6
green chillies - 2 (chopped)
Red dried chillies - 3 whole
Ginger - 1 inch (chopped)
Oil - 2 Tbps
Salt - to taste


Steps -
1. Cook rice in a pan or rice maker. avoid making in pressure cooker if possible.
2. In a wok ,add oil. when heated add mustard seeds , chana daal , urad daal & chopped ginger.Cook till the daals are cooked i.e. turn brown.
3. Add red chillies (broken into 2), chopped green chilies & curry leaves . Stir till the leaves change color.
3. add the shredded coconut & salt. Stir for 2-3 minutes
4. add rice and curd. mix well.
5. Cook for another five minutes ans tir occasionally.

And here is your coconut & curd rice.This can be served with coconut chutney or sambhar . Put i like to eat it as is :)

Mustard Oil - Yehi hai right choice baby .. AAHA !!

Just wanting to know the nutrition value of the oils that i use for cooking, i decided to check up the labels on each of their containers - vegetable oil/ pure ghee & mustard oil.Well i was sort of paranoid seeing that the mustard oil i use says For External Use and no nutrition label.oh oo !!!
was i using this external oil for last 2 years of being in US ??
Well !! did some research and found out that one thing to be considered if you r in US , FDA doesn't approve mustard oil as cooking oil and even though you will get it in its purest form but marked as For external Use. Since it doesn't contain anything else i use it for cooking as so some of my others friends too.
My mom and grand moms always used mustard oil for cooking .But people say Olive oil is the best ?? Which one should we use ?? Definitely Mom is right - the mustard oil.Not only it adds a tinge to your food but also has the lowest amount of saturated fat ...believe it or not only 1%..compared to olive oil(14%) , sunflower oil (11%) and peanut oil (18%).
Saturated fat is the worst fat - gives you bad cholesterol and reduces good cholesterol.
